Carrot Cake Bars

INGREDIENTS

  • 2 scoops vanilla Fresh Field whey protein
  • 1 c. coconut flour
  • 1 tsp kosher salt
  • 1 Tbsp cinnamon
  • 1/4 c. stevia
  • 1/4 c. pumpkin puree
  • 1/4 c. carrots grated
  • 1/4 c. maple syrup
  • 1/2 c. peanut butter
  • 1 tsp vanilla extract
  • 1/2 c. milk

Frosting

  • 8 oz. reduced fat cream cheese
  • 1 tsp cinnamon
  • 2 Tbsp stevia

INSTRUCTIONS

  1. Combine protein powder, flour, salt, cinnamon, stevia together and mix thoroughly
  2. Warm peanut butter in microwave to soften and combine with syrup, carrots, pumpkin, vanilla, and milk
  3. Combine dry and wet ingredients
  4. Line a 8 x 8 inch baking pan with parchment paper
  5. Evenly distribute mixture in pan and refrigerate or freeze for approximately 10 minutes to firm
  6. Mix together ingredients for frosting
  7. Spread frosting over mixture and refrigerate to firm again
