Carrot Cake Bars
INGREDIENTS
- 2 scoops vanilla Fresh Field whey protein
- 1 c. coconut flour
- 1 tsp kosher salt
- 1 Tbsp cinnamon
- 1/4 c. stevia
- 1/4 c. pumpkin puree
- 1/4 c. carrots grated
- 1/4 c. maple syrup
- 1/2 c. peanut butter
- 1 tsp vanilla extract
- 1/2 c. milk
Frosting
- 8 oz. reduced fat cream cheese
- 1 tsp cinnamon
- 2 Tbsp stevia
INSTRUCTIONS
- Combine protein powder, flour, salt, cinnamon, stevia together and mix thoroughly
- Warm peanut butter in microwave to soften and combine with syrup, carrots, pumpkin, vanilla, and milk
- Combine dry and wet ingredients
- Line a 8 x 8 inch baking pan with parchment paper
- Evenly distribute mixture in pan and refrigerate or freeze for approximately 10 minutes to firm
- Mix together ingredients for frosting
- Spread frosting over mixture and refrigerate to firm again
