Protein Zucchini Chocolate Chip Muffins
INGREDIENTS
- 2 scoops vanilla Fresh Field whey protein
- 3/4 c. flour
- 3/4 c. monk fruit
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 1/2 c. avocado oil
- 1/4 c. milk
- 1 tsp vanilla extract
- 1 c. shredded zucchini
- 1/2 c. chocolate chips
INSTRUCTIONS
- Preheat oven to 350 degrees.
- Shred zucchini with grates and squeeze with paper towels to remove as mush moisture as possible.
- Combine all dry ingredients and whisk.
- Combine all wet ingredients and whisk.
- Combine wet and dry ingredients together.
- Fold in zucchini and chocolate chips.
- Add mixture to muffin cups and bake fore 20 to 25 minutes or until toothpick is clean when poked in center.
