Protein Zucchini Chocolate Chip Muffins

INGREDIENTS

  • 2 scoops vanilla Fresh Field whey protein
  • 3/4 c. flour
  • 3/4 c. monk fruit
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1/2 c. avocado oil
  • 1/4 c. milk
  • 1 tsp vanilla extract
  • 1 c. shredded zucchini
  • 1/2 c. chocolate chips

    INSTRUCTIONS

    1. Preheat oven to 350 degrees. 
    2. Shred zucchini with grates and squeeze with paper towels to remove as mush moisture as possible. 
    3. Combine all dry ingredients and whisk. 
    4. Combine all wet ingredients and whisk. 
    5. Combine wet and dry ingredients together. 
    6. Fold in zucchini and chocolate chips. 
    7. Add mixture to muffin cups and bake fore 20 to 25 minutes or until toothpick is clean when poked in center.
